This morning I woke up slightly before my alarm clock, and was pleasantly surprised to look out my bedroom window to this lovely view!Picture 389I apologize for the fuzziness of the picture, but I have to tell you the picture does not nearly do it justice.  I feel so lucky to be able to see the beautiful morning sunrise over Lake Michigan without even having to get out of bed!

To backtrack for a moment to yesterday’s eats… did anyone notice the irony of my “get rid of my cold” juice, juxtaposed against the beer bottle?!?  I meant to point this out (it was Mike’s beer bottle) but forgot to mention that, and noone called me out on it haha.  I just wanted to be clear that beer is NOT a recommended intervention to cure a cold ;) Picture 386After a looooooooooooooooooooooooong day of meetings, I refreshed myself by stopping at Whole Foods.  In addition to the shopping list items, I made up a very, very tiny hot bar box.  It was a smorgasbord of random yummies such as egg-free tofu “egg salad”, lake salad, roasted beets, marinated mushrooms….. there were about 10 different things in there, all delicious!Picture 390I also bought a gingerberry Kombucha (my first in two years, since I worked at WF during a summer in grad school)… to try to get rid of this cold of mine!  I forgot how it truly does give you a kick/high/energy buzz.. whatever you want to call it, Kombucha will do it for ya!!Picture 391Dinner was Pizzeria Due with Mike, Charlie, and Joey. I was not a fan of this super-bland salad that was way too heavy on the vinegar and needed more EVOO and spices…Picture 392But my vegan individual pizza was spectacular!! Honestly friends, this is my third vegan pizza since going vegan this past summer, and they have all rocked my socks off.

Coming from a previous CHEESE FREAK, this is saying a lot that they can still taste darn good without the cheese!! After inquiring for about 10 minutes to make sure the crust did NOT contain butter (I learned that it tastes so good due to mass amounts of oil, instead)…. I requestd mine sans cheese but loaded with tomatoes, spinach, broccoli, mushrooms, and olives.Picture 394

My only disappointment was that it was not enough pizza for me!!! The waitress assured me it would be plenty of food, but I guess she hasn’t met someone with my voracious appetite….

It is waaaaay past my Friday bedtime (up and at ‘em tomorrow early for a run!) so I’m off to bed!

Gratitude Journal:

1) Meeting-filled day was boring, but at least it wasn’t stressful :)

2) Whole Foods trip = a happy Val

3) So excited that I know I can go to a pizza place and order a veganized version, and that it will actually taste good!!

Do you feel awkward asking for restaurants to make accomodations for you?  I used to, but I’m quickly getting over that ;)

  1. vegan pizza? i like the sounds of that! I sometimes shy away from asking the waitress to make modifications, but they way i think of it, if i want a wonderful meal and a good experience at a restaurant, then i shouldn’t mind asking for minor modifications! The worse they can say is NO, but when does that really happy! most restaurants are more then happy to accommodate!

  3. I sometimes feel guilty about making the server work so hard to put in my specifications. When I go out with Mallard, I feel a little more awkward because he’s usually starving when we sit down and my order is never a short ordeal.

  4. As long as you’re polite to the waiter and other restaurant staff, then they should treat you well as a customer – period (no matter if there’s “needed accommodations).
