Tempting Tempeh Sloppy Joes

Yay, I love days that are sunny enough to shine light on my food photos! :)   There’s only one thing I love more.. MARCH!!! Ok, so March actually ranks pretty low on my list of favorite months, but I’m so pleased that dreary February is over, and that spring is on the way!

Yesterday I kicked off March in style by having the day off work for Kashmir Pulaski Day, which is an obscure holiday that I’m pretty sure is only celebrated in the Chicago area since Pulaski was a Polish explorer that helped settle Chicago way back then…. or so I think?  I thought I would recap my whole day’s eats, which is something I never do anymore!

After sleeping in until 8am (glorious!), I had a craving for something sweet and salty, so I reached for an Hungry Hungry Hippie staple… apples and hummus!

Sorry Elise, it wasn’t my favorite!  I ate a few bites like this, and then gave up and doused the apple in my current food obsession, all natural CRUNCHY PEANUT BUTTER, plus a drizzle of agave and a sprinkling of cinnamon.

Much better!  I’m seriously addicted to peanut butter these days, and I think I need to find a way to break the habit. I’ve worked hard to lose the marathon weight that I put on last summer, and I feel like I’m going to put it back on if I continue to eat 2-4 T. of peanut butter a day.  Seriously, I eat that  much!  To be honest I feel like the weight hasn’t really hit me like it probably should have by now, so I guess it’s possible that my body is enjoying all of this healthy fat I’ve been giving it, but I should probably nip this habit in the bud before it gets outta control!  Does anyone else eat this much nut butter each day?  Any chance I’m not a weirdo for this PB obsession? ;)

After returning home from the gym (treadmill + yoga), I set out to make lunch.  I wasn’t hungry when I started making it, but I was SO excited to make a recipe that I had been thinking about all morning that I just couldn’t wait any longer.

Ever since I bought two packages of tempeh a few weeks ago (something I haven’t bought in a while), I had had my mind set out to make….

Tempting Tempeh Sloppy Joes

Ingredients: 2 packages tempeh (I used flax tempeh), 1 T. EVOO, 1 garlic clove, 1 purple onion, 2 1/2 c. tomato sauce, 4 T. maple syrup, 3 T. mustard, 1 1/2 tsp. salt, pepper to taste, 2 tsp. oregano, 1 tsp. curry powder

1.  Dice onion – I like mine to be somewhat chunky so I don’t dice it too finely – and saute in EVOO a long with diced garlic clove.

2.  Once onion becomes translucent, crumble in tempeh.  Stir occasionally for 3-4 minutes.

3.  Add in remaining ingredients until heated;  for best flavor, bring to a low boil and continuously stir the mixture for 10 minutes for the flavors to fully  meld.

I plated this up on some bread when I served it to Mike, but I LOVED this dish so much that I gulped it down plain with a spoon! Talk about comfort food – Mike and I both raved about this meal!!

Oddly enough, the Tempting Tempeh Sloppy Joes held me over for hours and hours.  For “dinner”, I felt like something sweet so I threw together a Green Monster (spinach, water, frozen banana, carob powder) and also mixed in some Kaia granola.This granola is sooo good!! The buckwheat seems to be a bit of an acquired taste, but the dates and spices made it super flavorful and it really made my GM so much more filling than usual.

I continued to snack on more of the granola plain throughout the night while watching, of course, The Bachelor…. and I was completely shocked!! I was convinced that Jake was going to pick NEITHER of the girls!

    You are not alone in the PB addiction! I buy it in these huge tubs from Costco and have to ban myself from purchasing it when I go through a phase of basically eating it nonstop (which is pretty frequent when I have it in my fridge).
    That tempeh looks so yummy! I will definitely have to keep that recipe in mind, I like tempeh but never know what to do with it.

  6. I’m a huge nut butter fan and have recently discovered making my own almond, hemp and walnut butters – mmmmm! I recommend just blogging about whatever you’re passionate about. Hmmm, for spring break – wine country I guess :-)

  8. Mmm, that looks good. I am going to save that recipe so I can try it out. I don’t like reading everyone’s daily eats so much, I like the recipes thrown in here and there and reading about occasional eats or really really good eats.
