Party in the house like yeah

Happy 4th of July!!!

Friday night’s party was a success…. well, except for the fact that my camera takes decent pictures sometimes yet other times is blurry for no reason.  Just another reason why I need an iPhone….

I wanted to share a yummy snack that I enjoyed earlier in the day.  For all of you who have asked me about how to cook for a vegan (myself) and an omnivore (Mike) at the same time – for lunch I made him a BLT (with vegetarian bacon… but it has egg whites so isn’t vegan) and made me a BLT as well, except my B stood for black beans.

Add in some spinach, tomato, vegannaise and mustard….. awesome combo!  I don’t think I’ve ever put beans on a sandwich before, but I’ll definitely be doing it again.

Last 4th of July Mike and I threw a bash for the younger relatives from his family, plus my parents. It was a lot of fun, but this year we wanted to throw a party for our friends.  We had a good turnout despite it being a holiday weekend – we were worried a lot of people would be out of town for the holiday, but it worked out well.

I made sure to make plenty of food!  I forgot to get a picture of the whole spread, but here’s the line up:

* Guacamole with chips and carrot sticks

* Cheddar, chevre and blue cheese (dairy) with crackers

* Vegan Mexican layer dip (recipe to come)

* Dairy Mexican layer dip

* Double Chocolate Coconut Macaroons (I just throw ingredients together but I’ll put a recipe together for ya per request from partygoers….)

* Angel cookies (coconut flavoring with a delicate sugar crust – recipe to come)

* Mint fudge brownies (recipe to come)


I’m always good about taking food pix but poor at getting actual people shots… I didn’t take as many as I would have liked but I did get two.

The worst part of the night was that by the time the last guest left and I put the remaining food away, it was about 1:15am…. I was sooooo not looking forward to getting up at 5am for my 9 miler that I actually considered going to my 24/7 gym to pump out the 9 miles on the treadmill, thinking it might be easier than getting up on less than 4 hours of sleep!

But, of course, I crawled into bed.  When the alarm went off, it felt like I had slept about 7 minutes.  Yikes!  I pounded some Vega Sport Performance Optimizer – about 1.5 servings for the caffeine jolt – and headed to my run.

Thankfully I not only survived, but had a pretty great run! Like everyone, sometimes I have days when I doubt my abilities but I’m not gonna lie, the fact that I can run an easy 9 miles on 3.5 hours of sleep feels awesome… like I must be doing something right.  Must be that vegan diet, right Dora? ;)

    woohoo! great party! i’m glad you had a good run, too. mine went surprising well after little sleep :-) must have been all the great food from the night before!
