Vegan Mint Fudge Bars recipe

Happy Friday! Unfortunately, I never got to go to Day 7 of my free yoga week because my car is in the shop and though I normally wouldn’t mind walking the 45 minutes to the yoga studio and back, I didn’t feel like doing so in the 90+ degree heat while carrying my yoga mat under my arm (I don’t have a yoga mat bag).
Buuut… that’s ok since Friday is typically my “rest” day anyway! Speaking of, I recently updated my marathon training plan on the right side of the page to reflect this year’s training. Until recently it was from my 2009 marathon training, which is a bit outdated
Instead of going to yoga, I’ve spent my morning doing some blog stuff getting ready for the big upcoming domain move. I’m trying to line up some really awesome giveaways for you guys that I’ll run at that time, too!

Here’s one of the recipes from last Friday’s 2nd of July party that I promised you. These are based on an old family recipe that I’ve loved for years, but that are nowhere near vegan…. but, now they are!
They were an enormous hit at the party and I hope you like them too!
Vegan Mint Fudge Bars
1st Layer:
1 c. cocoa powder
2 c. sugar
1 c. hot water
1/2 c. coconut oil or canola oil
1/3 c. applesauce
2 tsp. vanilla
2 tsp. baking powder
1 tsp. salt
2 1/2 c. flour
* Combine all ingredients.
* Bake 350 for 35-40 minutes in 13×9″ pan sprayed with Pam or coconut oil. Let cool.
2nd Layer:
2 c. powdered sugar
1/2 c. Earth Balance
1 tsp. mint extract
green food coloring (optional)
* Beat all ingredients together.
* Once the first layer is cooled, spread the mint layer over the brownies. Chill in the refrigerator.
3rd Layer:
1 1/2 c. chocolate chips
1/2 c. Earth Balance
* Melt chocolate chips and Earth Balance; beat until combined.
* Once the mint layer is completely cooled and solid, spread the chocolate mixture over the mint layer. Refrigerate or keep in the freezer until ready to serve. These taste even better the next day, and freeze well.

Yeah it is *way* too hot out to do much of anything. Actually, it cooled down a bit here today… but still. I like walking much better when it’s cool!

I made these and the top two layers were AMAZING. The bottom layer was not my taste, it was more cakey. I think next time I will use an oatmeal/cocoa based bar on the bottom.
