Sorry guys, I originally wrote this up as a draft but apparently I published it this morning accidentally.   I LOVEEE these things, and I credit for the fact that I survived this morning’s incredibly humid 7 miler!  These are chock full of nutrients due to the chia seeds and maca, dates provide quick energy, and the peanut butter provides satiety.

Enjoy! :)

Chocolate Pre-Long Run Energy Bites

Ingredients:

1 c. oats

1 c. dates

1/2 c. coconut

1 c. nut butter (I used Chocolate Dreams peanut butter)

1/2 c. chia seeds

1/4 c. maca

water as needed (approximately 1/4 c.)

Instructions:

1. Blend in food processor until just combined, but do not overprocess or the peanut butter will make it greasy.

2. Roll into bite-size balls and freeze.  This recipe makes between 25-20 ‘bites’.

I learned my lesson… I can not eat these unless I am committing to a 10+ mile run :)

  3. these look yummy, val! i don’t run, but i’d still eat them any time i needed an energy boost (or not!)

  4. I am a huge fan of homemade energy balls – I must try making these.

The new design template is very eye catching and I spot some new headers that I have to take a look at asap. What is this about a cookbook? I can’t wait to find out.

  5. Great job Val. These are definitely something I’d have a hard time not devouring. I think I saw on your blog to make honey mustard with maple syrup? It was awesome!

  6. Oh, these sound perfect!! I’ve been meaning to make something to pop in my mouth before the gym or a run. I love chia seeds for pre-working out. I’ve also been wanting to try maca. Do you feel like it gives you an extra boost?

  8. Wow looks amazing. Maca AND chia are powerful on their own so together they must be really in it for the long haul. (Protein doesn’t hurt either!)
It looks like we are into similar flavors: my family business is getting more Chunks of Energy in the world–they are bite sized energy bars sold in bulk bins. When you don’t have time or ingredients to make your own, you can get these. We have lots of flavors and they’re raw, vegan, organic, and gluten-free (although not for the highly allergic).
    What do you think?
