In June 2009, I began writing for a healthy living blog, Marathon Val, which focused on my journey while I trained for my third marathon. Over the past year, I have become more and more passionate about my vegan lifestyle and I wanted to change the title of my blog to reflect this new focus.
I created Vegan by Valerie because I love creating new vegan recipes that not only I can enjoy, but that please all of the omnivores in my life such as my husband, family, and friends. I love proving to non-vegans that vegan food can be fun and delicious! So if you are reading this and you don’t follow a vegan diet, that’s ok!

I also plan to continue to talk a lot about marathon training, as I am currently training for my fourth – the 2010 Chicago Marathon. Val, I love your blog! The fact that you went from not being a runner to running multiple marathons is really inspirational. I am running my first half marathon on November 14th (Richmond, VA) and my first marathon on February 13th (Myrtle Beach). I am not so worried about the half but am pretty nervous for the full, especially training through the winter.

I just started training for my first marathon in Alaska in June. I’m contemplating the 2010 Chicago marathon, but will see if I can finish one first!! Looking forward to reading more on your blog. I became a vegetarian (vegan most of the time) about a year and a half ago and am always looking for new recipes!

I’d like to subscribe so please send me updates. I learned about your website yesterday when it was on the back of someone’s shirt in the Chicago marathon. I’m also a vegan athlete and focus more on triathlon/Ironman competitions. It’s always good to know others who compete and are vegan.
